Food Porn Friday Episode 5: Spinach

I’m gonna be honest guys, I think Barcelona might have killed me. All that fried tapas, patatas bravas, sangria… I think I can hear my arterties. I have renewed my intention to exercise and lose weight, even though mornings are dark and cold and I don’t want to run please no don’t make me… and of course, there’s no point in all this, if I don’t start eating more healthily.

Don’t worry, guys, the butter level of these recipes increases as we go on.

Green smoothies have become one of my morning staples, especially on days when I go running. I don’t tend to have breakfast until I get to work, and when I wake up early to run, and then have my long commute, I need something to plug the gap in my morning.

Spinach is a great addition to the smoothies. You can barely taste it, but it’s full of iron, fibre and vitamins. I buy frozen spinach that comes in handy blendable portions, or you can cook and freeze yourself in an ice cube tray. Here are a couple of my favourite recipes:

Apparently in these carb-free times, breakfast salads are taking the world by storm…

…I’m sorry, guys, I really am. But I do think this is the kind of salad I’m most on board with – fresh spinach, crispy bacon, and a poached egg, where the yolk acts as a dressing for the salad.

And now we’re getting to the good stuff… pancakes! The spinach can trick you into thinking that this is healthy, and it’s served with a flavoured butter (two of the sweetest words in the world).

And finally, the spinach breakfast classic. Spinach, toasted muffin and poached egg feels sort of good for you, but then you just smother it in hollandaise and dissolve into a buttery heaven. This one even includes bacon.
