Food Porn Friday – Episode 9: Baking

Hi Guys. Many apologies for my extended break – life got in the way of brunching, but I won’t let it happen again (I probably will).

I’ve been thinking about comfort food recently, that kind of warm, fresh from the oven, fills the whole house with the scent of brunch kind of comfort food. So I’ve decided to bring you the best of baked brunch highlights. For the sake of ease, we won’t be talking about bread – I’m sure that will still come. I’m going to be focusing on things that can give you a sugar hit on these dark and tired mornings.

For most people, when you ask them what cake comes to mind when they think of breakfast, they say muffins. This is an American classic, now available at every coffee shop in a variety of flavours, large enough to fill you up but small enough to still be a brunchside snack. I was trying to decide what kind of muffin I wanted to feature, then I came across these:

Yes, you saw correctly. That is bacon. Covered in maple syrup. Inside the muffin? There’s apple too. I don’t know about you, but I want it.

Banana bread is one of my favourite kinds of cake. I don’t often make it, because my life is full of bananaphobes, but the one I usually make is this one from Nigel Slater’s Simple Suppers (the TV show that will forever be known as My Happy Place). The ground hazelnuts make it mouth-wateringly moist and the chocolate chips bring it to a new level. However…

This recipe seems to cleverly combine the Hazelnut and Chocolate Chips flavours by using Nutella, everyone’s favourite ingredient. I already have strong feelings about banana and Nutella. And look how gooey this is! Definitely something I will try in future.

If there is a flavour that is absolutely my kryptonite in the morning, it’s cinnamon. My brother makes a mean cinnamon toast, and it literally takes every last bit of my willpower not to buy a cinnamon whirl every time I buy coffee at the station in the morning. So oh my gosh, if someone made these for me on a Saturday morning I would love them forever…

I’m not sure if I would need the cream cheese frosting, but then again, would I really turn it down?

And then there’s the donut. I know these aren’t technically baked, but they just seemed to fit, you know? Though I like mine best in the original, ring, glazed formula perfected by Krispy Crème, I felt like the breakfast staple the blueberry had been a bit leftout in this blog so far, and this recipes seems to rectify this.

The glaze is lemon, so maybe will appeal to those who don’t have as big a sweet tooth as I do.
