I’ve had Mexican food on the brain this week, guys. It’s ridiculous. I had a burrito on Monday for lunch from Tortilla and I can’t stop thinking about it. I know I can’t regularly eat burritos, but why not? Don’t they contain all your important food groups? Beans, meat, vegetables, CHEESE?
Luckily, Buzzfeed have handily compiled a list of 18 brunch-y burritos, of which I will now select some highlights:
The classic – sausage, egg, sun-dried tomato and every burrito’s hero, avocado.
The healthy one – I am so in to the sweet potato, salty cheese, creamy avocado combination.
The extreme – pulled pork, scrambled egg, melted cheese. My heart races a little just thinking about it.
It’s cheating to use Buzzfeed to do my dirty work, however, so let’s expand our Mexican breakfast horizons a little, shall we? Jamie Oliver has kindly provided some help here with the classic Huevos Rancheros:
Eggs baked in a chilli tomato sauce, served inside tortilla wraps – the ultimate hangover cure, to set your stomach on fire.
And what about a Mexican twist on a classic – eggs benedict?
With chorizo muffins, a chipotle hollandaise and sliced avocado to cool things off, this couldn’t fulfil any more of my cravings right now.
